Chocolate Date Slice

Dates are not an expensive item, they are great to use in slices. I am catering later this week with my students and these are a couple of the recipes I will use.
1 cup chopped dates
1/2 cup butter
1 large egg
1 cup water
1cup sugar
2 cups SR flour
1/2 teaspn bi carb
2tablespoons cocoa
1/2 cup chopped nuts

Cook the dates in water and bring to the boil.
Remove from heat and add butter.
Allow to cool to luke warm then stir in sugar and beaten egg.
Add dry ingredents and stir in crushed nuts.
Pour into a well greased and [papered tray.
Bake for 20mins in a moderate oven 180 C
When cool add icing and sprinkle with nuts.

Jam Drops
125gms butter
1teaspn Vanilla
1/2 cup castor sugar
1 egg  lightly beaten
1&1/3 cup SR flour
2 tablespoons raspberry jam
2 tablespoons apricot jam

Beat the butter, sugar,essence and egg in a small bowl with electric beateruntill combined stir in the flour
Shape 2 level tablespoons on mixture into a ball place on tray with about 5cm space.
use the back of a wooden spoon and indent the biscuits
spoon a small amount of jam in each indent bake for 10mins or untill lightly golden

Anzacs
We all ahve a version of Anzacs.
1 cups oats
1cup flour
3/4 cup coconut
1/2 cup butter
1 teaspn bi carb
1tablespn golden syrup
2 tablespns boiling water
Mix oats flour, sugar and cocnut.
Melt butter and syrup together
Mix soda and boiling water and add to dry ingredients
Heap teaspoons of mix on a greased tray and bake in a low oven for 160 C for 20mins
