Boiled Pineapple and Fruit Cake

This is not just another boiled fruit cake

450 g tin crushed pineapple
125 g butter
1 cup sugar
500gms mixed fruit
1 teaspn mixed spice
1 large teaspn bicarbonate of soda
1 cup self raising flour
1 cup plain flour
pinch of salt
2 eggs

Drain pineapple,save the juice,and put the pineapple into a saucepan with 1/2 cup of the juice.
Add mixed fruit, butter, spice, sugar
Bring gently to boil and simmer for 3-4 minutes remove from heat add bicarb
Mix together,Cool completely
Add flour and salt together,add eggs and mix blending well together
Pour into the prepared tin and bake in moderate oven for 1- 3/4 hours.
