Potato Lasagne

You can make versions of lasagne many ways using all sorts of vegetables ,breads and pastas.

1 kg cooked potatoes, peeled and sliced
500gms. ricotta cheese
1/2 cup. chopped onion
1 bunch spinach
2 cups grated Mozzarella cheese
Olive oil

Cook potato
Cook spinach cool and squeeze out moisture
Toss potatoes with pepper, olive oil and salt
Layer the potato, ricotta and mozzarella cheese and spinach in layers finishing with potato and lastly cheese
Bake for 30 minutes till golden
