Hunza Spinach Pie

This is a favorite that goes back to the early 70,s when I was a flower child.
I read a book about the Hunza people and their longevity..
And loved the foods..

Pastry .
1-1/2 cups wholemeal flour
1 teaspn salt
1 1/2 cups wheatgerm
4tablespoons butter
1-1/2 cups water
Rub in butter to flour, wheatgerm and salt till resembles breadcrumbs add water to make a dough, Roll out half and line a greased pie dish.

Filling
2 bunches of spinach (you can use silver beet if you like I do as i grow it in my garden) Cooked in a small amount of water and drained (squeeze out excess moisture).
500gms of potatoes cut into small cubes and cooked.
25o grams cottage cheese.
1/2 teaspoon basil
1/4 teaspn mixed herbs
1/4 teaspn nutmeg
1 teaspoon salt
Pepper
Combine spinach, potato, cottage cheese,herbs, S/P and nutmeg allow to cool fill pie pastry and add lid press edges together bake in oven at least 30 mins till cooked and golden.
