Zabaglione

How greatful I am that we live in such a diverse society
This Zablaglione is a real summer treat and perfect for this time of year
Something speacial for the whole family

6 egg yolks
1/3 cup sugar
3/4 cup Marsala wine
1 teaspoon grated zest
Ground cinnamon or freshly grated nutmeg
Vanilla extract
1-1/2 cups cream, whipped
Strawberries raspberries,
lady finger or biscotti biscuits

Place egg yolks and sugar in a large stainless steel bowl
Add grated lemon Peel pinch of cinnamon a drop of vanilla the yolk mixture
Pour in the Marsala wine

Half-fill a large pot with water bring the water to a boil and reduce the heat to very low
Place the bowl with the yolk mixture over the water
The bottom of the bowl shouldn't touch the water
Whisk the egg yolks making sure that the water does not boil as it ensures that a gentle even heat thickens the mixture without curdling it
Whisking traps air in the yolks for a light, fluffy mixture
Whisk for about 10 minutes until the mixture grows
froths up and becomes pale.
When it reaches the desired consistency the texture of mousse take the bowl of custard out of the heat
Cool
Whip cream and add to the cooled custard with a whisk gently fold them together
Keep some of the whipped cream to serve on top
Add Zabaglione to ramekins
Serve with whipped cream, berries, biscotti biscuits
