Pumpkin Lasagna

Winter is coming so my diet changes to more comfort style foods. Pumpkin lasagna is very easy to make.
If you are a pumpkin lover as I am, you will find this a beaut.
Ensure lasagna sheets use fresh or sheets that need to be cooked for best results.

500 gms pumpkin, chopped
1 large onion, chopped
2 cloves garlic crushed
s/p
1 teaspoon vegeta stock cube
250 gms lasagna sheets
1 1/2 cups ricotta cheese
1 tin chopped tomatoes
1 cup grated cheese
fresh basil

Steam pumpkin and onion till tender
Cook lasagna till aldente
Mash or puree with 1 clove garlic s/p and ricotta cheese and vegeta.
Layer pumpkin, grated cheese and lasagna sheets finish with lasagna
Mix tomatoes, basil and 1 crushed garlic together and add on top and finish with grated cheese.
Bake about 30 minutes
