Fettucine with Ricotta & Ham sauce

There are so many ways to serve pasta and I have tried many over the years.
This is so easy, ricotta is still reasonably cheap even though it has doubled in price over the last 3 months.

1oz butter
2 leeks finely sliced
1 clove garlic
150 gms ham
2 cups ricotta cheese
1 cup sour cream
1/2 cup tasty grated cheese
1 chicken stock cubes
milk
s/p
fettucine

In a saucepan, melt the butter,and add leeks cook till soft.
Cut ham into small dices and stir into leeks with garlic and cook for a further 2 minutes
In a bowl mix ricotta and sour cream s/p, crushed stock cube and add to bacon and leeks stir and cook till sauce has heated thru.(if you need to thin it out more add a bit of milk. Add grated cheese.
Serve with Fettucine
