Couscous and Tuna

I was invited out to dinner and was served this dish and really liked it, we now have regularly, I always have plenty of de pipped Kalamata olives, as I buy them at Safeway by the 1.25Kg for around $10 then marinate them. Serve with a green salad or with toasted pita or flat bread

1/4 cup black olives, halved2 cups chicken stock
1-2 tablespoons sultanas
I tin tuna
1 carrot, diced
1/2 red capsicum, diced
1 cup couscous
1 tablespoon lemon juice
Place chicken stock, carrot, red capsicum, sultanas, olives and lemon rind into a small saucepan. Bring to boil, add couscous and cover. Place on a low heat for a few minutes until liquid is absorbed. Add tuna and lemon juice, stir through couscous using a fork.
