Calamari Salad

I’m the only one in my house that loves this, my partner Rod likes his calamari crumbed and deep fried, me I like it sautéed till tender and served with a toss salad .

Calamari
2 tbsp olive oil
3 oranges segmented
1/4 cups mint leaves
Mixed lettuce
1 Lebanese cucumber seeded, sliced
1 red onion thinly sliced
Cook calamari till tender in an oiled pan. Transfer to a salad bowl. Add lettuce, orange segments, onion, cucumber and mint,
Dressing
1/3 cup olive oil
1/4 cup orange juice
1 garlic clove crushed
1 tsp Dijon mustard
Whisk all ingredients together. Pour over salad mix thru.
