Tomato Capsicum & Fetta Salad

During summer this was one of my favorite salads I ate it most days with various meats
Love fetta and olives, I often use dried tomato

2 large fresh tomatoes
1 large green capsicum
1 cucumber
4 spring onions
Fetta cheese
Mixed Lettuce
kalamata olives

Dressing
3 tablsp. fresh lemon juice
1 clove garlic, pressed
1/2 teasp. salt
1/4 teasp cracked pepper
3 tablsp. olive
1/4 cup chopped parsley

Place Capsicums into oven when blister peel and cut into large pieces cool
Slice cucumber and onions place all together over a bed of mixed lettuce
Mix lemon juice, garlic, salt, pepper and oil together add parsley
Set aside in fridge to marinade 20 mins wrapped in glad wrap
Serve on a bed of mixed lettuce add a few olives and diced fetta cheese
