No fuss Jams

In Australia Jams are a family favorite and we devour many varieties during fresh fruit season, At present my Lemon and Orange trees are filling up with fruit so marmalade will be our breakfast treat.
These easy recipes are the most basic you can make, but certainly make Jam making affordable.


Always wash Jars in hot soapy water and rinse in hot water, place in oven to dry this is a good sanitiser.
When testing for setting point place a small amount on a saucer, when it cools it will set to the desired consistency
Lemon will build up the pectin

MARMALADE
500 grams oranges and lemons
5 cups water
1.5 kg white sugar

Wash and cut remove the pips, slice the fruit thinly
Place prepared fruit in a dish (not metal) and cover with the water stand overnight.
Place in a saucepan and boil till rind is soft, add sugar stirring till dissolved
Cook for 20 minutes till setting point has reached.
Bottle.


PLUM JAM
3 kg plums
2 cups water
1 teaspoon lemon juice
3 kg sugar

Wash plums and cut in half, remove stones
Place in a pan with the water and lemonjuice
Heat gently to boiling point and cook till plums are soft
Add sugar and stir till dissolved
Bring to the boil and boil rapidly, until it reaches setting point
Bottle.


APRICOT JAM
3kg apricots
2 1/2 cups water
3 kg sugar
juice 1 lemon
Wash and stone apricots combine apricots and water and simmer till fruit is soft
Add sugar and lemon juice stir till dissolved
Bring to boil and boil rapidly until it reaches setting point
