Potatoe Egg and Leek Pies

These yummy pies are so easy and taste great I love Leeks and buy them when they are in season
Pie Filling
1oz butter
4 leeks
2cloves garlic, crushed
6 potatoes cooked
4 hard boiled eggs
2 cans Asparagus cuts,drained
3 tablespoons fresh parsley
2/3 cup sour cream
1 cup grated cheese
S,P
1 chicken stock cube
Melt butter in a pan add Leeks and cook over low heat stirring for 3-4 mins
stir in garlic
stir for a further minute remove set aside
Chop potatoes add to leek mixture stir through till mixed add crumbed stock cube then add chopped hard boiled eggs asparagus cheese parsley sour cream and egg yolks S,P mix to combine set aside
Make pies with pre made Puff pastry add filling and top with pastry
