We sold one of these on a daily basis at the cafe it was a popular cake the icing is great with the flavour and texture of the cake, put plenty of icing on top
It should be a moist cake and its so easy to prepare
3 Cups grated carrot
1/1/2 Cups conola oil
4 Eggs
1 Cup chopped nuts (optional)
2 Teaspoons bi carbonate soda
2 Cups flour
2 Cups Sugar
1 Teaspoon Cinnamon
1 Teaspoon vanilla essence
Sift together sugar flour bicarbonate of soda and cinnamon
Stir in oil
Add eggs one at a time mixing well after each addition
Add carrots nuts and vanilla stir well
Pour into greased and papered tin
Cook for about 30mins at 180degrees C let cool in the pan
Cream Cheese Dressing
500gms icing sugar
250gm Creamed cheese
1/2 cup of Melted butter
When cake cold top with icing refrigerate
