Taboulli with Couscous

Taboulli with Couscous
I have found Couscous to work great with taboulli it is lighter and easier to obtain
Many versions of this are around I personally like this combination
1 cup prepared Couscous
3 cups Parsley
2 Spring onions
2Tomatoes
Juice of 2 Lemons
Oil
2 Garlic cloves
Soak Couscous in boiling water.
Chop parsley finely add to bowl
Chop spring onions add to bowl
Chop tomatoes into small cubes add to bowl
Drain cooked Couscous squeeze out excess water and add to bowl
Add crushed garlic and lemon juice S/p to taste
