The students and I have made this recently and we used the purple spanish onions for the Jam they were glorious with the lamb mince.
500 grams Lamb mince
¾ cup Stale bread crumbs
2 cloves of garlic
1 red chili
1-1/2 teaspns lemon rind
1-1/2 tsps ground cumin and coriander
Chopped fresh mint
Onion Jam
3 large Purple onions
180 ml vinegar
1/3 cup sugar
Combine mince, breadcrumbs, garlic, chili, lemon rind, cumin, coriander
And roll into meatball shapes, cook meatballs until browned, serve with onion jam.

Combine onions, vinegar and sugar in a pot and cook on low heat, uncovered stiring when frequently for 20-30 mins or until caramalised
