Easy Cheesecake

Over the years I have made many cheesecakes they are not hard to make this one is now my standard and I make it a lot its so easy and you cant make a mistake Ricotta cheese is reasonably priced and easy to obtain
I also make these small and use them in my catering

750gms Ricotta
4 Eggs
1cup Sugar
5 tablespoons Lemon juice
1 packet Biscuits (crushed)
125gms melted Butter
Mix crushed biscuits, and melted butter, press into cheese cake tin
(Refrigerate)
Beat Cheese till soft , Beat eggs until thick,add sugar continue beating and add
Cheese mixture, mix in lemon juice mix When all mixed well spread into crumb crust
Bake in moderate oven180ÂșC- 25-30mins
