Potato Puff

I love potato and this is a great dish you can add a bit of cooked finally chopped bacon as well don’t panic if it doesn’t . Hint: never try to beat egg whites in a plastic bowl

1 tablespoon butter
100g tasty cheese
30g Parmesan (you can use the parmesan in a pkt)
Chives chopped
2 eggs
3 potato’s, cooked
1 tablespoon flour
6tbsp milk
S/P

Butter 4 ramekins
Cook potatoes, I do mine in the microwave 8-9 minutes
Grate cheeses. Mash the potato and add to a bowl stir in the cheeses, chives and flour.Separate the eggs add the egg yolks to potato mix stir through .Warm the milk and butter in a saucepan, then pour this over the potato mixture and stir everything together. Season with s/p
Whisk the egg whites with an electric beater to floppy peaks and gently fold the egg whites into the potato mixture.
Fill the ramekins with the mixture. Bake for 15 minutes until puffed and golden.
