Tuna Roulade

Now for something fancy I have made roulades for years, they are always well recieved and this is a great version it is a refreshing dish for a speacial occassion and everyone will want the recipe

Roulade
1 Tin Tuna drained
1 spring onion
3 tablespoons Mayonnaise
5 eggs separated
Spinach
1 cup milk
3 tablespoons flour
3 tablespoons butter
S/P
Cook spinach in a pan, cool and squeeze out all liquid let sit
Melt butter add flour and mix together add milk slowly stir till boils and thickens let simmer 1 min while stirring S/P
Cool
Beat Egg whites till stiff peaks are formed
When white sauce is cool add to a mixing bowl and beat in egg yolks till well mixed, add squeezed spinach mix together
Fold in egg whites using a knife gently pour into greased and papered Swiss roll tin and bake for around 15mins a light golden (don’t overcook)
Turn out..
Mix drained Tuna with chopped spring onion gently (don’t smash tuna)
Add mayonnaise S/P
Spread onto roulade and roll
Refrigerate serve cold or hot.
