Sweet potato I adore, I first ate sweet potato in NewZealand in the early 70,s back in my vegetarian hippy days, I love this pie its easy and tasty
I personaly use the microwave to cook the sweet potatoes or bake for a roasted taste I also sprinkle a few herbs
If the white sauce is too thick add a dash of milk dont make it runny though
500 gms Sweet Potato
185gms mushrooms
1 onion chopped
2 tablespoon butter
1 Vegetable stock cube
2 tablespoons flour
1cup cream
S/p
Pastry sheet
Grated cheese
Peel and cut the sweet potato season and cook in microwave
Fry mushroom and onion in butter add flour and mix well
Gradually stir in cream and continue cooking until sauce boils and thickens
Season with s/p and stock cube
Line a pie dish with pastry arrange sweet potato over the base pour over mushroom sauce and sprinkle with cheese
Bake 200ÂșCfor about 30 mins
